You can have your favorite meal anytime you want to. If you are fond of eating chicken then you must have tasted its different types of cooking. You can have your chicken deeply fried on a pan, you can have it grilled as barbecued, have it smoked or you can eat it as a sandwich. Chicken is so often used as it can be just as tender and delicious like beef or pork. Having said that, why not try to cook your own chicken, and eat it, too? You can do it with no fuzz at all by simply following a delicious split roasted chicken recipe.
First buy and make all the basic ingredients ready to start cooking. Here are the basic things that you would require:
1 whole sized roasting chicken
Kitchen string or twine
Spit
Salt
Pepper
Seasoning salt
Butter
Chain drive
Motor
You’ll need a whole sized roasting chicken that has been cleaned outside and inside as well. You can ask your butcher to take out all its insides and clean up the gut cavity. Then rub the whole chicken with butter enough to cover the entire skin, but don’t overdo it that it becomes greasy. Then add some seasoning salt and pepper. For the inside gut cavity, you have to place some drops of pepper and salt as well.
Now you are ready to put the chicken on the spit. Take hold of the spit and shove it with enough pressure to the back of the chicken making sure to steer it through the cavity. Make sure you have placed the chicken on the center of the spit. For better results of good cooking, fold the wings with some kitchen string against its body. Tie up the chicken legs with the same kitchen string around the spit. Try to place your chicken on the center of the fire.
Set up the spit over the fire and on a roasting bracket or rack. Try to fasten the chain drive to the end of the spit and start the motor to help the spit begin its turning. Try to regulate the motor speed to about one turn of the chicken per 1 to 2 minutes.
Let the chicken cook over the fire for about 45 minutes to one hour. You can check the doneness of the chicken meat by slicing through its thigh with a knife and check if the juices come out clear. If so, then you have properly cooked the chicken and it is considered well done. If the juices are still not clear enough, let the chicken roast over until such time you check again and decide that is finally cooked to your liking.
You can let the chicken stand for a few minutes to cool down or you can take it out of the spit and slice some parts to eat while still hot. You can enjoy your chicken either way you want it to be. Bon a petite!
