Successful Spit Roasting: The Secret is How You Make the Fire

The fire and how you start it is the key factor in spit roasting. It will definitely result to a delicious and tender meal. The fire should have a steady unhurried heat that would slowly cook the meat in its own natural juices.
First, choose a place where you can set up your fire pit that is sheltered away from any airstream. Use a fire pit that is non-flammable. If you are spit roasting a smaller meat, then you can make a fire in the barbecue grill or fireplace.
Charcoal is the best to use to start your fire because it gives more intense heat than wood. Once the charcoals heat up, arrange your charcoals in two rows. Make sure that the first row has a distance of about 4 inches in the front and the other row about four inches behind it. This is important to note because the distances would keep the fat drippings of the meat to directly fall into the fire. Fat drippings falling directly into your fire pit can cause the fire to flare up and burn up the meat. To avoid this, it would be practical to have a dip pan under the meat you are spit roasting.
You must remember that spit roasting takes a long time. So make sure you have someone alternating to watch over the fire. The watchers must make sure that the fire should be kept steady with the right heat cooking over the meat. If your fire pit is losing some fire, then you can have heated charcoals ready on another fire pit to replenish it.
Spit roasting is another good way of outdoor cooking. It can result to a deliciously cooked meal if properly done. You must take into account that to do this, you must keep in mind that spit roasting starts with a good pit of fire complemented with the time that involves slow, steady cooking that goes along with it.
